
Vegetable skewers with Graviera Naxou PDO & tzatziki sauce

Ingredients
For vegetable skewers:
- 200gr diced potatoes
- 200 gr diced carrots
- 200 gr diced zucchini
- salt & pepper
- pistachio grains
- 2 eggs
- minced parsley
- 100 gr Graviera Naxou PDO
- 100 gr breadcrumbs
- 150 gr Greek yogurt
- 1 cucumber
- ½ clove of garlic
- chives
- 5 g lemon juice
- EVO oil.
For tzatziki sauce:
Mix the Greek yogurt with ½ grated garlic clove, minced chives, the white of the cucumber chopped, lemon juice and EVO oil
For vegetable skewers:
Brown the vegetables in a little oil and cook them well: making sure that they do not stay crispy!
Combine vegetables, egg, breadcrumbs, grated Graviera Naxou PDO, parsley and mix up to get the right texture for your stuffing (neither too liquid, nor too hard), add salt and pepper.
Make cylinders of stuffing on the skewers, roll them in breadcrumbs and pistachio grains and then fry them in little oil.
Serve lukewarm with tzatziki sauce.
